Cullin Skink 1 lb Smoked Haddock 1 pint of milk 2 onions 1 piece of mace or a pinch of nutmeg 1 pint of boiling water 3 ozs butter 3/4 of floury potatoes pepper
Poach Haddock in milk with half an onion and nutmeg or mace and bring just to the boil. Add water put to one side to cool then remove and flake fish. Melt butter in add rest of onion diced cook gently until soft pour over reserved cooking liquid add potatoes cook until soft add pepper to taste puree then stir in flaked fish gently, serve with oatcakes or a nice crusty bread. |
